PAUL DeSANTIS
The youngest of four children, I grew up on East 3rd & Avenue U in Brooklyn, New York.  My parents, Frank and Luisa DeSantis, had immigrated from Bari, Italy in the 1960's wanting to raise their family in America.  While growing up there wasn't a single night that mom wasn't in the kitchen cooking for the family; most evenings I was there helping her.  Even though I didn't realize it at the time, this is when the foundation was being laid for my future and my love of cooking.  Everything mom made was from scratch and most everyday I made the trek to the neighborhood markets to purchase things such as ripe eggplant, leafy broccoli rabe, crusty braided loaves of bread, and cheeses that had been delivered fresh just that morning.  In an old fashioned Italian family...this is a way of life...cooking meals everyday using the fresh ingredients we had just bought.

I have harbored a long love affair with the notion that one day I would be
able to do what I love to do every single day; cooking in my own kitchen for the masses.  I've taken some of my old family recipes, combined them with some of my own creations, and tested them over the past 18 years.  I believe it's been well worth the effort.

My love of cooking stems from a large family and my parents entertaining friends and family most every weekend.  When I was very young I would marvel how my mom could cook such a large meal for so many people and have everything timed perfectly.  Couple that with her ability to WOW people with her homemade lasagnas, spaghetti & meatballs...all the way down to her classic Caesar salad and made from scratch blue cheese dressing and I was well on my way to loving all things associated with food and entertaining.  

For years now Paul and I have spent many evenings, Saturdays, & Sundays in our own kitchen sustaining the torch of our family traditions, perfecting our recipes, honing our talents, and keeping our dream alive and well…
